Check it: estate-grown-only agave, slow-roasted in steam-powered brick hornos (ovens), then double-distilled at El Pandillo in copper stills, fermented in open-top vats, and double-aged (6 years in American white oak bourbon barrels, followed by an additional year in French oak) Only three ingredients go into this bottle: blue Weber agave, water, and natural yeast. No additives, no shortcuts, no compromises. That’s the Volans way, and for their many fans, it’s the only way. Tasting notes - The nose immediately announces its highland pedigree: there's a sweetness and herbaceous complexity that you can really only get when you source agave from high elevation (in this instance, nearly 7,000 feet).
