Choya Umeshu is a traditional Japanese liqueur made by steeping whole, unripe Ume plums in alcohol (typically a neutral grain spirit or sake) and sugar. While often called "plum wine" for marketing, it is technically a liqueur because the alcohol is not fermented from the fruit but used as a base for extraction.
Tasting Notes:
- Aroma: Intense and aromatic with a bouquet of ripe Ume plums, honey, and delicate floral undertones. A notable characteristic is a stony, marzipan-like scent (similar to Amaretto) derived from the fruit pits.
- Palate: The texture is silky and slightly viscous. It leads with a rich, "gooey" sweetness reminiscent of honey or jam, which is immediately balanced by a sharp, refreshing tartness. Primary flavors include green plum, apricot, and subtle citrus zest.
